If you’re looking for a healthier way to indulge this holiday, I have the recipe for you — vegan chocolate mousse. It’s made with coconut milk and it’s not super sweet. The coconut flavor isn’t very strong, so even non coconut lovers will likely enjoy this sweet! In hindsight, I should have shared this recipe before today since you need to refrigerator the coconut milk for 24 hours. But, if you’re like me, you already have a can sitting in the fridge.
This is the recipe I used, but here are my modifications/notes:
I used one can of coconut milk instead of two, which reduces the number of servings from eight to four.
I didn’t set any of the whipped “cream” aside for topping. I wanted it all chocolate!
I used four tablespoons of cocoa powder instead of three; it’s helpful if you sift the cocoa powder so you don’t have any lumps. I may try with melted chocolate next time.
I replaced the powdered sugar with 2T maple syrup. This isn’t a very sweet dessert, so add more if you If using maple syrup, you’ll likely need to let the mousse set up a bit in the fridge before eating. The first time I made this, I used powdered sugar and it whipped up better.
I added a splash of vanilla, but I think either almond or coconut extract would be great, too.
I’ve heard this is great served with graham crackers — no spoon needed! 🙂
