Hi there! We made it through Monday — yay! I hope your week is off to a good start. I had planned on getting this post published last night, but I have been without internet access at home since around 3:00 yesterday afternoon. That should tell you how my week has been so far, although it was nice to unplug for a while.
If you read any sort of health or fitness-related blogs, I’m sure you’ve read your share of “a day of eats” posts. I’m finally jumping on the bandwagon and have decided to share with you what I ate on Monday. If you like these types of posts, I am happy to make them a regular feature.
My day started off as it typically does — with coffee! I work from home on Mondays, so I usually make myself a few cups to enjoy throughout the morning. After working for about an hour, I whipped up a three ingredient pancake (banana, egg, cinnamon, and oat bran). Technically, it was four ingredients if you count the cinnamon! About two hours later, I had my morning snack of applesauce and cheese.
I worked a few more hours and before I knew it, I was hungry again! I decided to whip up a quick lunch from Skinnytaste’s first cookbook. The Mongolian beef & broccoli came together pretty quickly and I sat down to lunch in under 30 minutes.
My afternoon was a tad stressful because I lost my internet service and I certainly cannot work from home without the internet. After trying to troubleshoot for about 45 minutes, I reluctantly called my internet provider. Turns out, there was a known outage that was being worked on and it wouldn’t be fixed before 11:00 that night. NEWS FLASH: as of 9:00 this morning, it still hadn’t been fixed; ETC is 3:15 today. Boo.

Since I couldn’t do any work, I watched a little TV before hopping on the treadmill for 30 minutes. Dinner was cooking in the crockpot, so after my workout and a quick shower, I sat down to braised cabbage and turkey sausage. It was so good (I’m sharing my modified version later this week).
About an hour later, I ate a mini (unpictured) peppermint patty to end my night. It certainly hit the spot!
