Meal Plan — Week of 1/29

Good morning! This week’s meal plan was dictated by what arrived in my Boston Organics delivery on Thursday. It contained beets, cabbage, and rutabaga as well as a variety of fruits. I was able to pair the veggies with what I already have on hand in the freezer and pantry — I love when that happens! My grocery list this week will be very short, and I’m not mad about that!

 

 

Here’s what’s on this week’s menu:

S: Leftover crockpot meatballs over zoodles

M: Crockpot cabbage with turkey sausage (modifying the recipe as I do not have cider on hand)

T: Salad with chicken, wild rice, and roasted beets

W – TH: Leftovers

F: Out to dinner

S: Leftovers
