Meal Plan — Week of 1/15

Happy Sunday! ¬†Just checking in with my meal plan for the week. I don’t know about you, but my life is much easier if I take a couple of hours each weekend to plan and prep for the week. It really helps me to stay on track and I can even sleep in a bit more each morning. Winning!

 

Here’s what’s on my menu for the week:

S: Skinnytaste enchiladas verdes with a side salad

M: Copycat Sweetgreen harvest bowl

T: Leftover enchiladas

W: Leftover harvest bowl

TH: Frittata using roasted butternut squash leftover from harvest bowls

F: Leftover enchiladas

S: Wing it

 
Breakfasts will be either oats or egg sandwiches with fruit. Lunches will be leftovers.

 

Because I am trying to buy only what I need for the week, here’s my shopping list:

Kale

Baby spinach

Butternut squash

Apples

Cilantro

Corn tortillas (18)

Salsa verde

Queso fresco

Goat cheese

Eggs
